Our Story
East Bay Kombucha started as a kitchen experiment — a SCOBY, some tea, and a stubborn belief that fermented drinks should taste as good as they make you feel. What began with half-gallon jars on a Manahawkin counter has grown into a small-batch brand you can find across the Shore.
We brew in limited batches so every flavor hits the same mark: bright, naturally effervescent, and free from artificial anything. No high-fructose corn syrup. No pasteurization. Just tea, fruit, time, and the kind of patience that can't be rushed.
The Lineup
Each batch is fermented twice — once for tang, once for depth — then blended with real fruit for flavor that comes from the source.

Great kombucha doesn't happen fast. It happens right — and that means giving fermentation the time and attention it deserves.
We start with a solid black or green tea base, sweetened just enough to feed the culture. No shortcuts, no extracts.
The SCOBY — a symbiotic culture of bacteria and yeast — gets to work over 7–14 days, turning sweetness into tang.
Once the base hits the right balance, we fold in real fruit — pureed, juiced, or steeped — for the second ferment.
Sealed in glass, left to naturally carbonate for a few more days. The result is lively, effervescent, and alive with culture.
